Pizza Monkey Bread

Pizza Monkey Bread

16 servings

Ingredients

  • 1/3 cup olive oil
  • 1 teaspoon Italian seasoning
  • 1 garlic clove, minced
  • 1/4 teaspoon crushed red pepper flakes
  • 2 cans (16.3 ounces each) large refrigerated flaky biscuits (8 count)
  • 2 cups shredded part-skim mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 20 slices pepperoni, halved
  • 1/2 cup marinara sauce plus additional marinara sauce, warmed
  • Torn fresh basil leaves, optional

Directions

  1. 1

Preheat the oven to 350°F. In a large microwave-safe bowl, combine the olive oil, Italian seasoning, minced garlic and crushed red pepper flakes. Microwave, covered, on high for 30 seconds. Cool slightly.

  2. 2

Cut each biscuit into four pieces. Add the cut biscuits to the bowl with the seasoned oil, and toss to coat. Add the mozzarella, Parmesan and pepperoni. Toss to combine.

  3. 3

Coat a heavy 10-inch fluted tube pan with cooking spray. Arrange half of the biscuit mixture in the pan. Drizzle with 1/4 cup marinara sauce. Repeat the layers. Editor’s Tip: Coat the pan well with cooking spray before filling. Otherwise, the biscuit dough will stick to the pan, and the bread will be difficult to remove after it bakes.

  4. 4

Bake for 40 minutes, until golden brown. Cool in the pan for 10 minutes. Editor’s Tip: Insert a toothpick into the center of the monkey bread to see if it's done cooking. The monkey bread is done if the toothpick comes out clean.

  5. 5

Run a knife around the side and center tube of the pan. Invert the pan onto a platter. Serve pizza monkey bread with additional marinara sauce. If desired, top with torn fresh basil and additional grated Parmesan cheese and red pepper flakes.
