Pork Stuffing
Ingredients
- 1 lbfresh ground pork
- 1 tbspminced garlic
- 3 co'brien potatoes or home fries
includes bell pepper & onions
- 3 tbspolive oil
- 17oz can salsa verde
- 14 oz can green chiles
- salt/pepper/ season salt to taste
Directions

In a medium skillet brown ground pork along with minced garlic over medium high heat

In another skillet add olive oil & potatoes- cover & heat over medium, stirring every 1-2 minutes until potatoes are soft when poked but crisp on the outside - approx 7-10 minutes

Once your pork/garlic is browned & has reached at least 160 degrees- add your salsa verde & chilies & stir - reduce heat & simmer while you continue cooking your potatoes

Once potatoes are done, transfer pork mixture with potatoes in a large bowl & fold carefully to combine- making sure to not break the potatoes. Add in salt, pepper & season salt as desired.
