You can make the most phenomenal, elevated and fancy dishes with puff pastry sheets. These pizzas are a case in point; they look and taste so delicious. Plus, puff pastry is inexpensive and doesn’t take long to cook.

Ingredients

  • 2frozen puff pastry sheets, thawed
  • 1 largeegg
  • ½ cupgrated parmesan, plus more for serving
  • ½ cupjarred pizza sauce
  • 8 ouncesgrated mozzarella
  • ¼ cupprepared pesto
  • ¼ cuppepperoni
  • 1 teaspoonitalian seasoning
  • fresh basil, for garnish

    Preheat the oven to 425 degrees F.

    Lay out the puff pastry on 2 parchment-lined sheet pans. Leaving a half-inch border around the edges of the puff pastry sheets, use a fork to prick all over the middles of the pastries. (This will help it rise evenly.)

    Mix the egg in a small bowl with a splash of water, then brush the pastry all over with it. Sprinkle over 2 tablespoons Parmesan on each sheet. Transfer to the oven and bake until just golden and puffed, 8 to 10 minutes. Remove and let the pastry fall. (If needed, use the back of a spoon to press the center of the pastry flat, leaving a 1-inch border.)

    Spread the pizza sauce on the center of each pastry sheet. Sprinkle over the mozzarella, then the remaining 1/4 cup Parmesan; dollop on the pesto, dividing evenly between the two pastry sheets. Top each with the pepperoni and Italian seasoning. Return the puff pizzas to the oven until the cheese has melted and the crust is deep golden brown, another 5 to 7 minutes.

    Remove the pizzas from the oven and let rest for 5 minutes, then garnish with the basil. Slice into squares and serve.
