Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper or lightly grease an oven-safe skillet.
Pat the salmon fillets dry, then rub them with olive oil, salt, and pepper.
In a small saucepan, heat diced peaches, bourbon, honey, Dijon mustard, soy sauce, garlic, smoked paprika, and red pepper flakes over medium heat.
Simmer for 5-7 minutes, stirring occasionally, until the peaches soften and the sauce thickens slightly.
Stir in butter for a silky finish, then remove from heat.
For a smoother glaze, blend the mixture or mash the peaches with a fork.
Place the salmon fillets on the baking sheet, skin-side down.
