Popeye was on to something... Spinach can pack a pretty tasty punch! This spinach pie recipe may look fancy once it hits the table, but it's relatively easy to prepare. Full of flavor and with flaky layers, it's well worth the effort.

Ingredients

  • 2 pound(s) spinach, fresh, washed, drained and chopped
  • 2 stick(s) butter, melted
  • 4 - eggs
  • pinch(es) parsley
  • 1 pound(s) cheese (1/2 Feta & 1/2 cottage cheese)
  • pinch(es) salt
  • - onion, minced for flavor
  • 1 teaspoon(s) dill, dried
  • 1/2 pound(s) Phyllo dough, thawed in refrigerator
  • 1 stick(s) butter, melted for brushing on phyllo dough

Directions

    Mix first 8 ingredients together.

    Butter the bottom of a 9" X 13" baking pan. Place 4 phyllo leaves on the bottom, buttering after each leaf.

    Place half of the spinach mix on phyllo leaves.

    Then place 4 more leaves on top of the spinach, buttering after each leaf. Place the remainder of the spinach and place one more phyllo leaf on the very top. (For a thicker and flakier crust, add more phyllo leaves on top.) Sprinkle with butter. Turn phyllo at the edges towards the rim of the pan.

    Bake in a moderately hot oven, 375 degrees, for 30 minutes or until golden brown.
