These lemon Parmesan chicken bites are tasty thrown on top of a salad or with pasta or rice.
Gather all ingredients.
Cut chicken breasts into bite-sized pieces and season with salt.
Melt 2 tablespoon butter in a 12-inch skillet over medium-high heat. Add chicken pieces in a single layer spaced about 1/2-inch apart, and cook until lightly browned, about 3 minutes.
Turn chicken and cook until other side is browned and chicken is cooked through (165 degrees F or 74 degrees C), about 2 minutes. Remove chicken from the skillet and set aside.
Melt remaining 1 tablespoon butter in the skillet over medium heat. Add garlic and cook until fragrant, about 30 seconds. Stir in lemon juice.
Return chicken to skillet and toss to coat.
Remove from heat. Stir in Parmesan cheese and lemon zest.
