Sugo is an authentic Italian tomato sauce that benefits from slow-simmering on the stove. This recipe uses only a handful of ingredients to create a rich, flavorful sauce.
<p>Prep and gather all ingredients. Heat the olive oil in a large <a href="https://www.cozymeal.com/shop/cookware" target="_blank" rel="noopener">pot</a> over medium heat.</p>
<p>Add the onion and cook until softened and translucent. Add the smashed garlic cloves and cook until fragrant and lightly browned, about 5 minutes. Remove the garlic from the pan.</p>
<p>Add the salt, red pepper flakes, bay leaf, crushed tomatoes and wine, if using.</p>
<p>Bring the sauce to a simmer and cover. Simmer for 1 hour. After 1 hour, remove the lid and simmer uncovered for an additional 15-20 minutes, until the sauce is thickened to your liking. Stir in basil and remove bay leaf. Taste and adjust for seasoning and salt.</p>
<p>Serve with pasta.</p>
