These Parmesan-crusted pork chops are about to be a regular in your dinner rotation! Juicy on the inside and crispy on the outside, they can't be topped.
Preheat the oven to 400 degrees Fahrenheit.
In a shallow dish, mix together the Parmesan cheese, breadcrumbs, paprika, parsley, garlic powder, and black pepper. Place the beaten eggs in a separate shallow dish.
Pat the pork chops dry with paper towels. Season both sides with salt and pepper.
Dip each pork chop in the egg, allowing the excess to drip off. Then coat thoroughly in the Parmesan mixture, pressing to adhere.
Heat the olive oil in a large, oven-safe skillet over medium-high heat. Add the breaded pork chops and sear until golden brown, about 2-3 minutes per side.
Transfer the skillet with the pork chops to the preheated oven. Bake until cooked through and registering 145 degrees on an instant-read thermometer. (About 10-12 minutes.)
Remove pork chops from the oven and let rest for 5 minutes before serving. Garnish with fresh parsley if desired, and enjoy!
