If you love nachos, just wait until you try totchos! Swap chips for tater tots, then load them up with ground beef, tons of cheese, and all the fixins!
Preheat the oven to 425°F. Spread the frozen tater tots in an even layer on a large baking sheet. Bake for 25-30 minutes until crispy and golden brown.
While the tater tots bake, cook the ground beef in a skillet over medium-high heat, breaking it up with a spatula, until no longer pink. Drain any excess grease. Stir in the taco seasoning and 1/4 cup water. Simmer for 2-3 minutes until the liquid is absorbed.
Sprinkle the cooked taco meat evenly over the crispy tater tots. Top with the black beans and shredded cheddar cheese.
Return the baking sheet to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
Remove from the oven and top the cheesy totchos with the pico de gallo, red onion, black olives, and pickled jalapenos. Add dollops of sour cream and guacamole.
Serve the loaded totchos immediately while hot. Enjoy!
