
This Cheddar Broccoli Chicken & Mashed Potatoes is a bowl of comfort that you can make in 30 minutes (okay- you can serve it on plates- but we like curling up with bowls of this after a long day!). Hot mashed potatoes on the bottom and the cheesy chicken and broccoli mixture spooned over the top. The chicken and broccoli are smothered in a rich, creamy sauce made with condensed broccoli cheese soup. We eat Cheddar Broccoli Chicken & Mashed Potatoes because it’s yummy, but it’s also a balanced meal in a bowl!
Season the chicken with salt and pepper
Heat the oil in a 10-inch skillet over medium-high heat
Add the chicken and cook for 6 minutes or until browned on both sides(make sure the skillet and oil are hot before adding the chicken)
Stir the soup, milk and broccoli in the skillet and heat to a boil
Reduce the heat to low
Cover and cook for 5 minutes or until the chicken is done
Season to taste
Serve the chicken and sauce over the potatoes
