Quick and easy bacon fried rice recipe, homemade with simple ingredients in one pot over stovetop. Loaded with crispy bacon, scrambled eggs, frozen vegetables. This 30 minute meal is better than Chinese takeout.
Heat a nonstick pot over medium high heat.
Add bacon and cook for a few minutes until crisp. Remove bacon from pot and keep aside. Crumble it when it cools down a bit. Don't throw away the bacon fat.
In the same pot with bacon fat, add sesame oil, onion, garlic, frozen vegetables and saute for a few minutes until they are tender.
Push these vegetables to one side of the pot and add eggs.
Scramble them until fully cooked.
Mix them together with the veggies.
Add boiled rice, cooked bacon, soy sauce, Sriracha sauce, salt, pepper and mix everything together.
Garnish with some more cooked bacon and lots of green onions. Enjoy!
