Bublanina is an airy sponge cake that’s made with berries or seasonal fruits. Here's why I think it's the perfect summer dessert.

Ingredients

  • 1 tablespoonbutter softened
  • 2 tablespoonsfine dry bread crumbs
  • 3eggs, room temperature
  • 1 cupgranulated sugar
  • 2 cupsall-purpose flour
  • 1 teaspoonbaking powder
  • ¼ teaspoonsalt
  • 1 cupheavy cream
  • 1 teaspoonvanilla
  • 1 tablespoonlemon zest
  • 3 cupsfresh strawberries, hulled and halved leghthwise
  • powdered sugar (optional)

Directions

    Prep Pan Preheat oven to 350°F. Generously coat a 13x9-inch baking dish with butter. Sprinkle evenly with bread crumbs to coat.

    Make Egg Mixture In a stand mixer fitted with the whisk attachment, beat eggs until foamy. Gradually add sugar and continue beating until lemon colored, increased in volume, and the whisk lifted out of the mixture holds a ribbon on the surface, about 5 minutes.

    Finish Batter On low speed, beat in flour, baking powder, and salt. Beat in cream and vanilla. When combined, stir in lemon zest.

    Bake and Cool Pour batter into prepared baking dish. Top evenly with strawberries cut side down. Bake 30 to 35 minutes or until golden brown. Cool completely on a wire rack. If desired dust generously with powdered sugar.
