Ingredients

  • 1 largechicken breast
  • ¾ cupcottage cheese
  • 2celery stalks (diced )
  • 2green onions (sliced )
  • ½ cupshredded cheddar cheese
  • 3 tbspchopped fresh jalapeno
  • 5slices bacon (cooked and crumbled )
  • ½ cupsour cream
  • ¼ cupchopped fresh jalapeno
  • ¼ cupfresh cilantro
  • ½ tsponion powder
  • ½ tspgarlic salt
  • 2juice of

Directions

    Cook chicken breast based on your preference. (Baked, boiled, grilled). Once cooked through, shred and chop into small pieces. Set aside to cool.

    Chop celery, green onions and jalapenos.

    In a large bowl combine the shredded chicken, celery, onions, jalapenos, bacon, cottage cheese and shredded cheddar cheese. Stir well.

    In a food processor or blender, combine all of the DRESSING ingredients. Blend until smooth.

    Pour the jalapeno dressing over the salad and toss.
