
You'll love this unexpected baked orange chicken, in which humble chicken breasts are marinated in a sweet, tangy sauce and coated with orange marmalade.
In a small bowl, combine the orange juice and soy sauce.
Pour 1/4 cup of the marinade into a shallow dish, then add the chicken and turn it to coat. Cover the dish and refrigerate it for at least one hour. Also cover and refrigerate the remaining marinade.
Preheat the oven to 350°F. Drain the chicken, and discard the marinade. Place the chicken and reserved marinade in an 8-inch square baking dish coated with cooking spray. Spoon the marmalade over the chicken.
Bake the chicken, uncovered, for 25 to 30 minutes or until the chicken juices run clear.
