In a large mixing bowl, add the stuffing mix.
Pour in 1 cup of milk and stir until all the stuffing is moistened. Let it sit for 2–3 minutes so it can soften slightly.
Add 2 pounds of ground beef to the bowl.
Crack in 2 eggs, then add ½ cup of ketchup.
Using clean hands or a large spoon, mix everything together until well combined. Avoid overmixing — just stir until evenly blended.
Form the mixture into a loaf shape (about 8 inches long) and set aside.
Lightly grease your crockpot and add baby potatoes and carrots to the bottom.
Place the meatloaf on top of the vegetables and spread the remaining ½ cup of ketchup over the top.
Cover and cook on Low for 8 hours, or High for 4–5 hours, until the meatloaf is cooked through and sliceable.

Optional: To cook in the oven, preheat your oven to 350°F (175°C). Place the loaf in a greased loaf pan or on a lined baking sheet. Spread the remaining ½ cup of ketchup evenly on top. Bake for 1 hour, or until the internal temperature reaches 160°F. Let rest for 5–10 minutes before slicing.
