The Italian grinder sandwich meets party pinwheels in these wraps with deli meat, provolone cheese, pepperoncini, and an Italian-inspired dressing.

Ingredients

  • 4 largelavash wraps or burrito-size tortillas
  • 4 ouncessliced provolone cheese
  • 8 ouncesthinly sliced ham or capocollo
  • 4 ouncesthinly sliced salami or other cured meat
  • 1 largetomato, thinly sliced
  • 2 cupsshredded romaine lettuce
  • 4thin slices red onion
  • 1 tablespoonred wine vinegar
  • 1 teaspoondried oregano leaves
  • ¼ teaspoonblack pepper
  • 2 tablespoonsextra-virgin olive oil
  • ½ cupdrained, jarred sliced pepperonicini peppers

Directions

    Lay wraps out on a clean work surface. Top with slices of cheese, ham, salami, and tomato to cover.

    Toss the lettuce and onion with vinegar, oregano, pepper, and oil in a medium bowl. Evenly spread the lettuce mixture over the wraps. Top each evenly with pepperonicini.
