You can dress up a beef Wellington with foie gras, cep mushrooms, or even truffles, but in my opinion, that beautiful fillet of beef should always be the star.
Ingredients
- 2beef fillets 1lb
- olive oil
- 1 lbwild mushrooms
- thyme sprig
- 500g puff pastry
- 8Slices parma ham
- 2 egg yolks beaten w 1tbsp water and salt
- 12 black peppercorns
- 2 tbspolive oil
- ½ lbbeef trimmings
- 4 largeLarge shallots peeled and sliced
- 1 bay leaf
- 11 thyme sprig
- red wine vinegar
- 2 ¾ ml750ml bottle red wine
- 750ml beef stock
