This homemade beef barley soup is loaded with nutritious veggies, tender beef and plump barley. It’s a complete meal in a bowl!

Ingredients

  • 1 tablespoonolive oil
  • 1onion (chopped)
  • 1 clovegarlic (minced)
  • 2carrots (sliced)
  • 1rib celery (sliced)
  • 2 cupscooked beef
  • 6 cupsreduced sodium beef broth
  • 14 ½ ouncescanned petite diced tomatoes (with juices, 1 can)
  • ½green bell pepper (diced)
  • ⅝ cuppearl barley
  • 1 tablespoonworcestershire sauce
  • ¼ teaspoondried thyme leaves
  • 1packet beef gravy mix
  • 1bay leaf
  • 2 tablespoonsred wine (optional)
  • 2 tablespoonschopped fresh parsley (or 2 teaspoons dried)
  • salt and black pepper (to taste)

Directions

    Cook onions and garlic in oil over medium heat until softened.

    Add remaining ingredients and bring to a boil. Reduce heat and simmer covered about 40-50 minutes or until barley is cooked.

    Remove bay leaf and serve.
