Healthified breakfast burritos loaded with bacon, egg, cheese, and peppers. Freezer-friendly for breakfast grab-n-go meal preps!

Ingredients

  • 1 Medium Bell Pepper, Chopped
  • 1/2 C. Red Onion, Chopped
  • 3 Large Whole Eggs
  • 6 Large Egg Whites (3/4 C. if using liquid.)
  • 6 Slices Center Cut Low Sodium Bacon, Cooked
  • 3/4 C. Reduced Fat Shredded 2% Sharp Cheddar Cheese
  • 6 Whole Wheat Low Carb Tortillas (40 Cal. Each)

Directions

    Lightly spray the inside of a pan with non-stick cooking spray.

    Sauté the pepper and onion over medium-high heat until softening.

  3. 3

    Lower the temperature to medium and add the eggs into the peppers and onions.

  4. 4

    Cook to scramble until the eggs are done.

    Lay out the 6 tortillas and scoop a heaping 1/3 C. of the egg mixture out into the center of each.

    Top each with 1 slice of bacon and about 2 Tbsp. of the cheese.

    Roll it all up together burrito style.

    Enjoy right away or for meal prep, set them on a baking sheet and place in the freezer for a couple of hours before wrapping in plastic and/or foil and storing in a freezer-friendly ziplock bag.

    To reheat from frozen, simply remove from its wrapping and place within a paper towel. Microwave for 1 1/2 - 2 minutes or until hot.
