  • ¾ cupfull-fat cottage cheese
  • 2 largeeggs
  • ½ cupbrown sugar
  • ¼ cupneutral oil (such as grapeseed or vegetable)
  • 1 teaspoonvanilla extract
  • 1 ¼ cupsall-purpose flour
  • 1 teaspoonbaking powder
  • ½ teaspoonbaking soda
  • 1 ½ teaspoonspumpkin pie spice
  • ¼ teaspoonsalt
