Strawberry Bruschetta with Whipped Ricotta

Ingredients

  • 1 pound fresh strawberries (hulled and diced)
  • Zest and Juice of one lemon
  • 1/4 tsp salt
  • 1 cup part skim or whole milk ricotta
  • 1/4 cup mascarpone cheese
  • 1 tsp lemon zest
  • Salt and freshly ground black pepper to taste
  • 1 baguette (sliced and toasted until golden brown)
  • 1 tablespoon thinly sliced fresh mint leaves
  • Balsamic Glaze

Directions

    In a large bowl gently stir together all of the ingredients for strawberries then set aside.

    In a blender or food processor add the ingredients for the whipped ricotta and process until smooth and light.

    Broil the slices of baguette until golden brown then spread on some of the ricotta and top with the strawberries and a few pieces of mint.

    Drizzle with balsamic glaze.

    Serve immediately.
