White Bean Chicken Chili makes a delicious meal full of spicy chili flavor, chicken, and white beans. This recipe is a simple and delicious take on chili that even your kids will love!

Ingredients

  • 2 tablespoons vegetable oil
  • 1 yellow onion, (diced)
  • 1 teaspoon garlic, (minced)
  • 1 can (14.5 ounces) chicken broth
  • 1 jar (18.75 ounces) Salsa Verde
  • 1 can (15.25 ounces) sweet corn, (drained)
  • 1 can (16 ounces) diced fire roasted tomatoes, (drained)
  • ½ teaspoon dried oregano
  • 1 pound rotisserie chicken, (shredded (about 2 heaping cups))
  • 1 can (15 ounces) white beans, (drained)
  • 1 medium jalapeno (diced, for garnish)
  • fresh cilantro, (chopped, for garnish)

Directions

    Heat oil over medium heat in a dutch oven or large pot. Add onion and cook for about 5-7 minutes, or until translucent.

    Add garlic and cook for 1 minute.

    Stir in broth, salsa verde, corn, tomatoes, and oregano.

    Bring the mixture to a boil. Reduce the heat to low and allow to simmer for 10 minutes.

    Add shredded chicken and beans. Continue to simmer for 5-10 minutes.

    Season with salt and pepper to taste.
