Ingredients

  • ½ cupall-purpose flour
  • 2 largeeggs, beaten
  • 1 cupbreadcrumbs (preferably panko)
  • ½ cupgrated parmesan cheese
  • salt and pepper
  • vegetable oil for frying
  • 2 tablespoonsunsalted butter
  • ½ cupsliced mushrooms
  • 1 smallgarlic clove, minced
  • ½ cupheavy cream
  • ¼ cupchicken broth
  • ¼ cupgrated parmesan cheese
  • salt and pepper
  • fresh parsley, chopped, for garnish

    Season the chicken breasts with salt and pepper. Dredge each piece in flour, dip in beaten eggs, and coat with a mixture of breadcrumbs and Parmesan cheese.

    Heat vegetable oil in a large skillet over medium heat. Cook the chicken for 4 to 5 minutes on each side until golden brown and fully cooked. Place on a paper towel-lined plate to absorb excess oil.

    In the same skillet, melt butter over medium heat. Add sliced mushrooms and minced garlic, sautéing for about 5 minutes until softened. Stir in heavy cream, chicken broth, and Parmesan cheese. Let the sauce simmer for 3 to 4 minutes until thickened. Season with additional salt and pepper to taste.
