
These roasted fingerling potatoes are the ultimate side dish. Perfectly seasoned & roasted on the outside, tender & fluffy on the inside!
Preheat oven to 400°F.
In a large bowl, combine potatoes, oil, garlic, salt, pepper, and thyme. Toss until evenly coated.
Spread onto a baking sheet flat side down and bake for 15 minutes.
Remove from the oven and sprinkle parmesan cheese on top, return to the oven and cook for another 10-15 minutes or until potatoes are golden brown in color.
