Preheat oven to 400 degrees. Heat your water to 112-114 degrees to active the yeast- if the water is too hot it will kill the yeast and it won’t activate!
Whisk together the warm water, butter, sugar/honey and yeast. I used my stand mixer. Let it sit for 10 minutes until foamy. If it doesn’t get foamy, your yeast is probably old or the water wasn’t the right temperature.
Next, add egg, salt, flour 1 cup at a time. I used my stand mixer with the dough hook attachment, but you can use your hands to knead it. Once the dough is smooth, move it to a well floured surface and begin rolling the dough into small balls. Keep in mind, they’re going to expand when you let them rest AND when you bake. Add them to a well greased baking pan. Cover with a kitchen towel for 10 minutes.
Brush with honey butter and top with flakey salt and bake for about 15-20 minutes. Brush with the honey butter again and serve warm!
