Tennessee favorite Captain Rodney's Boucan Glaze is beloved in this creamy, cheesy appetizer. If you can't find the glaze, order it online or substitute with pepper jelly.

Ingredients

  • 1pkg. cream cheese, softened
  • 8 oz.sharp cheddar cheese, shredded (about 2 cups)
  • ½ cupmayonnaise
  • 3 medium(about 1 1/2 oz. total) scallions, thinly sliced (about 1/3 cup), plus more for garnish
  • 7slices cooked bacon, chopped (about 1 cup), divided
  • ½ cupcaptain rodney’s boucan glaze or red pepper jelly, divided
  • 6round butter crackers (such as ritz), crushed (about 1/3 cup), plus whole crackers for serving

Directions

    Preheat oven to 350°F. Gather all ingredients.

    Stir together cream cheese, Cheddar cheese, mayonnaise, scallions, 1/2  cup of the bacon, and 1/4 cup of the glaze until smooth and well blended. (If using red pepper jelly, microwave on HIGH until loosened and forms a glaze-like consistency, about 30 seconds.)

    Transfer mixture to a 3- to 4-cup baking dish or a 6-inch cast-iron skillet and spread into an even layer. Top with crushed crackers. Bake in preheated oven until bubbling around edges, 15 to 20 minutes.

    Top with remaining 1/2 cup bacon; drizzle with remaining 1/4 cup glaze. Garnish with scallions and serve with additional round buttery crackers.
