
This Cheesy Mixed Vegetable Bake is filled with tender vegetables and a creamy sauce for the perfect side dish to almost any meal.
Add vegetables to pot of boiling water. Cook for 5 minutes then place veggies into bowl of cold water while you make the sauce. Drain vegetables well and set aside.
In saucepan melt butter over medium heat. Whisk in flour and cook until golden and thick, 1-2 minutes. Preheat oven to 375˚F.
Whisk in ¼ cup milk at a time, breaking up lumps as you go. After all milk has been whisked in remove from heat. Stir in remaining ingredients.
Drain vegetables and pour them into a 9”x13” baking dish. Cover with sauce. Bake for 30-40 minutes or until golden brown on top. When done vegetables should be fork tender. Allow to cool for 5 minutes before serving.
