In a medium bowl, whisk together buttermilk, eggs, vanilla, and melted butter.

Let the batter rest for 10–15 minutes at room temperature.
Heat vegetable oil in a deep pot to 350°F (175°C).
Drop spoonfuls of batter into the hot oil.

Repeat with remaining batter, maintaining oil temperature.
Dust warm beignets with powdered sugar.
