
Strawberry Cake Mix Cookies only need 5 ingredients! Soft-baked strawberry cookies, that start with a cake mix, are rolled in powdered sugar and then baked. They get perfect sweet crinkly tops while they bake in the oven.
Preheat the oven to 375° F. Prepare a cookie sheet by lining with parchment paper, silpat liner, or spray with cooking spray. Set aside.
In a small bowl add the dry strawberry cake mix and baking powder. Stir with a wire whisk to combine.
In a separate larger mixing bowl, use a hand mixer to blend the eggs and oil until well combined.
Add the dry ingredients into the wet ingredients and mix with a hand mixer until everything is combined.
Use a small cookie scoop (1 tablespoon size) to scoop out the cookie dough and roll the dough into a ball with your clean hands. Place the powdered sugar into a small bowl and roll each cookie dough ball in the powdered sugar, making sure that it is coated well.
Place 12-15 cookies on the cookie sheet. Make sure they are at least 2-inches apart from each other.
Bake for 8-10 minutes. The tops should have cracks and the edges should still be pale or lightly golden brown.Allow the cookies to rest and set on the warm cookie sheet for about 5 minutes. Remove them to a cooling rack to cool completely.
