
Cook macaroni according to package directions and set aside.
In a large saucepan, melt butter over medium heat. Add flour and stir until it comes together.
Gradually whisk in milk and bring to a simmer. Add salt, pepper, garlic powder, onion powder, and paprika.
Once thickened, turn heat to low and add cream cheese. Stir until combined.
Add Monterey Jack cheese and cheddar cheese. Stir until melted.
Stir in sour cream and hot sauce until combined.
Stir in macaroni, crispy chicken and blue cheese. Serve!
