Ingredients

  • 4 medium-sized potatoes (Russet or Yukon Gold, scrubbed and sliced into 1/2-inch thick rounds)
  • 2 cups shredded cheddar cheese
  • 6 strips cooked bacon (crumbled)
  • 3 green onions (thinly sliced)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika (optional)
  • Salt and pepper (to taste)
  • 1/4 cup sour cream (optional, for serving)
  • 1/4 cup ranch dressing (optional, for serving)

Directions

    Preheat your oven to 425°F. Line a large baking sheet with parchment paper or lightly grease it. Arrange the potato slices in a single layer on the baking sheet.

    In a small bowl, mix the olive oil, garlic powder, smoked paprika, salt, and pepper. Brush the oil mixture onto both sides of each potato slice.
