Quinoa Burrito Bowls are packed with chicken, plenty of fresh veggies, and of course nutritious quinoa! They're super easy to make and way better for you than take out. A perfect delicious weeknight meal.

Ingredients

  • 2 tbspolive oil
  • 6boneless, skinless chicken breasts
  • 1 tspchile powder
  • 1 tspcumin
  • 1 tspgarlic powder
  • 1 canblack beans (drained and rinsed)
  • 1 largeorange bell pepper, diced
  • 2 cupsdiced tomato
  • 2 cupsfrozen corn, thawed
  • 2avocados, sliced or diced
  • ½ cupgreen onions, sliced
  • 1 cupcheddar cheese, grated
  • 2 cupscooked quinoa
  • cilantro for garnish
  • plain greek yogurt or sour cream for garnish

Directions

    Generously season the chicken with salt and pepper.

    Combine chile powder, garlic powder and cumin together. Rub on the chicken breasts.

    Heat oil in pan over medium high heat. Cook chicken breasts about 4-5 minutes on each side or until cooked through and internal temperature reaches 165 degrees.

    Let the chicken rest for 10 minutes, then cut it into slices or bite size pieces, set aside.

    Warm black beans on the stove top.

    Divide the quinoa, beans, chicken and remaining ingredients into 6 bowls. Top with plain Greek yogurt or sour cream, cheese and cilantro
