Elote, or Mexican street corn, is a popular Mexican snack made with grilled corn on the cob slathered in a creamy, tangy sauce and topped with cheese, chili powder, and lime.

Ingredients

  • 4 earscorn, husked
  • 2 tablespoonsvegetable oil
  • ¼ cupmayonnaise
  • ¼ cupsour cream
  • ½ cupcotija cheese, crumbled
  • 1 teaspoonchili powder
  • 1 tablespoonchopped fresh cilantro (optional)
  • 1lime, cut into wedges
  • salt to taste

Directions

    Preheat a grill or grill pan to medium-high heat. Brush corn with vegetable oil.

    Grill corn for 10–12 minutes, turning occasionally, until charred and cooked through.

    In a small bowl, mix together mayonnaise and sour cream.

    Remove corn from grill and while still hot, spread each ear evenly with the mayo-sour cream mixture.

    Sprinkle with cotija cheese, chili powder, and cilantro if using.
