Chinese Chicken Salad a crowd favorite! This salad is great for serving at large gatherings. A crunchy refreshing mix of cabbage, red cabbage, cilantro, green onions, crushed Ramen noodles and almonds tossed in a sweet Asian dressing.

Ingredients

  • 1/2 large cabbage, sliced into very thin strips
  • 1/4 red cabbage, sliced into very thin strips
  • 1 1/2 cups shredded carrots
  • 1 bunch green onions, sliced thin
  • 1 bunch cilantro, chopped fine
  • 1 cup slivered almonds
  • 3 packets Ramen noodles, crushed (reserve 2 of the seasoning packets)
  • 3 cups cooked chicken, chopped
  • 1/3 cup + 2 tablespoons sugar
  • 2/3 cup rice vinegar
  • 2/3 cup olive oil
  • 1 1/2 tsp sesame oil
  • 2 tbsp soy sauce
  • 2 packets Chicken flavored Top Ramen packets

Directions

    In a very large bowl add all salad ingredients and toss to combine.

    In a small mixing bowl, whisk together all dressing ingredients until sugar is dissolved and everything is combined.

    Pour the dressing evenly over top of the salad and toss everything together until all of the salad is coated in dressing.

    Salad is best served after sitting in the fridge for an hour or two but can be served immediately when in a pinch.
