Ingredients

  • ½ teaspoonground cinnamon (optional, but recommended)
  • ½ cupunsalted butter, cold and cut into small cubes
  • ¼ cuphoney or maple syrup (optional, for added sweetness)
  • ½ teaspoonvanilla extract

    In a small saucepan, combine the chopped strawberries, granulated sugar (or honey), lemon juice, cornstarch, and vanilla extract.

    Cook over medium heat, stirring occasionally, until the mixture comes to a simmer and thickens, about 5-7 minutes.

    Once thickened, remove from heat and set aside to cool while you prepare the crumble base and topping.

    Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper or lightly grease it.

    In a large mixing bowl, combine the oats, flour, brown sugar, baking powder, salt, and cinnamon (if using).
