Trim the ends from the green beans and cut the larger ones in half.
Preheat the griddle to medium heat for a few minutes. Add 2 tablespoons of the butter, the diced onion, kosher salt, and pepper. Cook 7 to 8 minutes, flipping and mixing a few times.Note: If you have a melting dome, use it to steam the green beans and speed up the cooking a bit.
Add the remaining 2 tablespoons butter, garlic, Cajun seasoning, and a few dashes of hot sauce if using. Cook 2 to 4 more minutes, flipping and mixing a few more times.
