Makes 30 bites Baked, not fried, Apple Fritter Bites are loaded with apple flavor, and the apple glaze puts them over the top! So good; so shareable!   This recipe is from my good friend Baker Mama and her new cookbook, Brilliant Bites: 75 Amazing Small Bites for Any Occasion.

Ingredients

  • Nonstick cooking spray (for greasing)
  • 1 ½ cups all purpose flour
  • 2 tsp baking powder
  • ½ tsp kosher salt
  • 2 tsp cinnamon
  • ¼ cup unsalted butter
  • ¼ granulated sugar
  • 1 large egg
  • ½ tsp vanilla extract
  • ½ cup no-sugar added applesauce
  • 1 ½ cups peeled and finely diced Honeycrisp apples (about 2 medium apples)
  • 2 cups powdered sugar
  • ⅓ cup plus 2 TBSP apple cider or apple juice

    Preheat the oven to 400 F (200 C); spray a baking sheet with cooking spray.

    In a small bowl, whisk together all the glaze ingredients. The glaze should be thin.
