
Soft and chewy sugar cookies with no butter. No chilling, rolling, or cutting out.
Preheat the oven to 375 degrees.
Mix the oil, sugar, egg and vanilla until smooth.
In a separate bowl, mix the flour, baking soda, and salt.
Add the dry ingredients to the wet ingredients and gently mix everything together to form a thick dough.
Form the dough into walnut-sized balls and roll each ball in the sugar coating.
Place cookies a few inches apart on an ungreased cookie sheet.
Bake for 8 to 10 minutes, until just starting to brown on the bottom. Do not overbake or they will be hard as rocks!
