
Preheat oven to 400 degrees F. Line a small baking sheet pan with parchment paper.
Place all ingredients into a food processor, except the pork rind panko, and blend until combined.
Use a heaping 1/4 cup measuring cup and drop mixture into pork rinds to coat. Make 5 patties.
Bake for 15 minutes. Broil for 5 minutes.
Preheat air fry to 400 degrees F. Air fry for 10 minutes or until golden brown.
Place leftover chicken patties in an airtight container and store in the fridge for 2 days.
