An easy Chicken Sausage Stir-Fry recipe made with lots of vegetables and a sweet & savory sauce all in under 20 minutes!

Ingredients

  • 1 tablespooncornstarch
  • 2 tablespoonswater
  • 2 tablespoonssoy sauce
  • 2 tablespoonsbrown sugar
  • 1 tablespoontoasted sesame oil
  • ¼ cupchicken broth
  • 1garlic clove, minced
  • 4fully cooked chicken sausage links
  • 1red bell pepper
  • 1yellow bell pepper
  • ½red onion
  • 1zucchini
  • 2 tablespoonscooking oil
  • ¼ teaspoonfine sea salt
  • ¼ teaspoonblack pepper
  • 2green onions, sliced

Directions

    Start by making the stir fry sauce. In a small bowl add the cornstarch and water. Stir together until cornstarch is dissolved. Then add soy sauce, brown sugar, sesame oil, chicken broth, and minced garlic to the bowl. Mix everything together until fully combined. Set the sauce to the side.

    Now wash and chop the bell peppers, chop or dice the red onion and slice the zucchini into half moon shapes. Next cut the chicken sausage links into ½-inch rounds.

    In a large skillet on medium heat add 1 tablespoon of oil and sauté the chicken sausage for 3-4 minutes or until lightly browned. Quickly remove the sausage to a separate plate and set aside.

    Next add another tablespoon of oil and toss in chopped vegetables. Season the veggies with salt & pepper. Sauté for 3-4 minutes until veggies are tender, then add chicken sausage back in the skillet.

    Now pour the stir fry sauce over the sausage and vegetables and stir until everything is evenly coated. Simmer for 2-3 more minutes to allow the sauce to thicken.

    Remove the skillet from the heat and garnish with sesame seeds or green onions and serve with steamed rice. Enjoy!
