
This easy curry chicken salad recipe is your next go-to filing to add to sandwiches, wraps, and bagels. For a light meal or a side dish, you can serve it with greens.
Cook the chicken: Heat oil in a skillet over medium heat. Add chicken and sprinkle with curry, turmeric, and pepper. Sauté until cooked through from all sides. Allow to cool completely.
Assemble the Salad: Mix chicken with all the other salad ingredients (no need to cook the onion). Season more to taste if needed. Serve with a green salad, in sandwiches, or my favorite: bagels!
