Ingredients

  • 1 1/2 lbs carrots (sliced (or 1 package of frozen sliced carrots, about 20 oz, thawed))
  • 1 c mayonnaise
  • 1/2 yellow onion (chopped)
  • 2 cloves garlic (minced)
  • 1 tbsp horseradish
  • 1/3 c shredded cheddar cheese
  • 2 tbsp crushed Ritz crackers

    In a large saucepan, add about an inch of water and toss in the carrots. Bring the water to a boil, then lower the heat and put the lid on. Let the carrots simmer until they’re tender but still have a bit of bite—this should take around 7 to 9 minutes.

    Once they’re done, drain the carrots, but keep about 1/4 cup of that cooking water for later. Transfer the carrots to a 1 1/2-quart baking dish.

    In a small bowl, mix together the mayonnaise, chopped onion, minced garlic, horseradish, and the reserved cooking liquid. Stir until everything’s well combined.
