
This dairy free sweet cornbread is made without milk, without butter, and without buttermilk. Still, it has a wonderful flavor and a subtle sweetness.
Preheat the oven to 400°F or 205°C.
Whisk together the cornmeal, flour, sugar, baking powder, and salt in a mixing bowl.
Add water, eggs, and oil. Mix until well incorporated.
Using a baking spatula, pour into an 8x8 baking pan lined with parchment paper.
Bake for 15 to 20 minutes or until a toothpick inserted into the center comes out clean. Let cool before cutting.
