This dairy free sweet cornbread is made without milk, without butter, and without buttermilk. Still, it has a wonderful flavor and a subtle sweetness.

Ingredients

  • 1 cup cornmeal (150 grams)
  • 1 cup all-purpose flour (120 grams)
  • 2/3 cup white sugar (135 grams)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup water (235 milliliters)
  • 2 eggs, beaten
  • 1/3 cup oil (80 milliliters)

    Preheat the oven to 400°F or 205°C.

    Whisk together the cornmeal, flour, sugar, baking powder, and salt in a mixing bowl.

    Add water, eggs, and oil. Mix until well incorporated.
