PUMPKIN BREAD

This is the BEST pumpkin bread you will ever make! It's so moist and DeLiCiOuS! The secret ingredient is a box of instant vanilla pudding. Nothing says fall like the smell of pumpkin bread baking in your oven.

Ingredients

  • 1 ⅓ cupsvegetable oil
  • 5eggs
  • 116-ounce can pumpkin
  • 2 cupsall-purpose flour
  • 2 cupssugar
  • 1 teaspoonsalt
  • 1 teaspooncinnamon
  • 1 teaspoonnutmeg
  • 1 teaspoonbaking soda
  • 1large package or 2 (3 ounce) packages vanilla instant pudding

Directions

    Preheat oven to 350°.

    Mix oil, eggs and pumpkin in mixing bowl and beat well.

    Add flour, sugar, salt, cinnamon, nutmeg, and baking soda to pumpkin mixture and mix until well blended.

    Stir in pudding mix with mixer until well blended.

    Pour into greased loaf pans.

    Makes 2 large loaves- Bake for 1 hour

    Makes 5 small loaves- Bake for 45 minutes
