
This is a hearty soup that is a meal in itself. It's a comfort food that's meaty and delicious! It contains potato gnocchi, ground Italian sausage and fresh spinach.
First, in a dutch oven or large pot on high/med heat, add oil and Italian sausage. Cut into the sausage to break it apart into small pieces. Brown sausage for 5 minutes. Remove from pot and place on a plate. You'll add it back to the pot later.
Next, add butter and onions to the pot. Cook for one minute. Add flour and stir.
Then, stir in the half and half followed by chicken broth. Cover and bring to a boil.
Next, add gnocchi and spinach. Cook for 5 minutes.
Then, add the browned ground sausage, garlic powder, corn starch, salt and pepper to taste. Sir and let cook five more minutes or until sausage is fully cooked.
