Somewhere between a smashburger and a patty melt, “The Chester” is the toasty, cheesy burger hybrid that’s guaranteed to turn any bad day on its head.

Ingredients

  • 12 oz.80/20 ground chuck
  • ½ tsp.kosher salt, divided
  • 4 tbsp.unsalted butter, softened
  • 8slices sturdy white bread
  • 8slices american cheese

Directions

    Gather all ingredients.

    Portion meat into 4 (3-oz.) balls. Heat 2 large cast-iron skillets over medium. Add 1 portion of beef to 1 of the skillets, and using a burger press or 2 large solid spatulas, smash into a thin layer roughly the size and shape of bread slices. Sprinkle with 1/8 teaspoon of the salt. Let cook, undisturbed, until underside is well browned, about 2 minutes. Flip patty and continue to cook, without pressing, until fully cooked and browned on other side, about 1 minute longer.

    Meanwhile, spread 1 tablespoon of the butter evenly on 2 of the bread slices; add to second skillet, buttered side down. Place a slice of cheese on each slice and cover skillet with a tight fitting lid; cook until cheese has melted and buttered side of bread begins to brown, about 2 minutes.

    Transfer the patty to 1 of the toasted bread slices. Flip other slice onto burger patty, check for bread toastiness, flip, and serve. Repeat process with remaining beef, salt, butter, bread, and cheese.
