These easy spinach chickpea cakes are super delicious! This is a healthy chickpea recipe that is great for lunch, dinner or snack!

Ingredients

  • 2 cupscanned chickpeas, rinsed and drained
  • basil
  • parsley
  • 1 cupspinach
  • 1egg*
  • 1carrot, grated
  • ½onion, chopped
  • 2garlic cloves, minced
  • ⅓ tspsalt or to taste
  • 1 tbsppaprika
  • 1 tspcumin
  • 1 tspblack pepper
  • oil for frying

Directions

    Mash chickpeas in a bowl and chop all other vegetables and small. Add all ingredients to the bowl, except the oil and mix until combined.

    Form patties and fry in a non-stick pan on both sides at medium-high until golden-brown.

    Take out and serve with a salad and hummus or this garlicky avocado sauce.
