This Mexican turkey meatloaf is flavored with green chiles, salsa, taco seasoning, beans, and onion. Then it is topped with enchilada sauce and cheese. Serve it with your favorite sides for a delicious, wholesome meal!

Ingredients

  • 2 pounds ground turkey
  • 4 ounces can green chiles
  • 15.5 ounces can black beans (drained)
  • 1 packet of taco seasoning mix
  • 1 cup salsa
  • 1 egg
  • ½ cup finely chopped onion
  • 1 cup oatmeal
  • 8 ounces enchilada sauce (canned)
  • 1 cup cheddar cheese (shredded )
  • fresh chopped tomatoes, cilantro, and jalapeños for garnish (optional)

Directions

    Preheat oven to 375. In a large mixing bowl, combine turkey, chiles, beans, taco seasoning, salsa, egg, onion, and oatmeal.

    Form a large loaf and put in a 9x13 baking dish. Bake 1 hour uncovered.

    Top meatloaf with enchilada sauce and cheese.

    Bake for an additional 15 to 20 minutes until fully cooked.

    Top with chopped tomatoes, cilantro, and fresh jalapeños. (This is optional.)
