Cowboy Caviar Pasta Salad is one of the best sides you can make! Fresh vegetables and tender pasta coated in a creamy Chipotle lime ranch.

Ingredients

  • 1 lbbowtie pasta
  • 1 tspkosher salt
  • 1 tspcoarse ground black pepper
  • 1 lb80/20 ground beef
  • taco seasoning mix
  • 1 cancorn
  • 15 ozblack beans, drained
  • 2 cupshalved or quartered cherry tomatoes
  • 2 cupsfreshly shredded cheddar cheese
  • 4green onions, thinly sliced
  • ¼ cupfinely chopped cilantro
  • ¾ cupmayo
  • ½ cupsour cream
  • ½ cupchicken broth
  • 1 tspapple cider vinegar
  • 3chipotle peppers in adobo sauce
  • 1 tspdill
  • 1 tspgarlic powder
  • 1 tsponion powder
  • ½ tspsalt
  • 1juice from lime

    Boil water and cook pasta per instructions on box

    Brown the ground beef, drain excess fat then season with the taco seasoning.

    Cook corn over high heat on a griddle until charred then remove.

    Make the chipotle lime ranch by combining all of the ingredients in a food processor then blend.

    Combine the pasta, beef, corn, black beans, tomatoes, cheese, cilantro and green onions in a large bowl. Pour dressing over the top of the ingredients then mix thoroughly so it’s lightly coated.

    Refrigerate for 1 hour then serve.
