Ingredients

  • 4 tablespoons fish sauce
  • 3 tablespoons tamarind paste
  • 1 tablespoon lime juice
  • 1 tablespoon rice vinegar
  • 4 tablespoons granulated sugar
  • 2 tablespoons vegetable or canola oil
  • 2 cloves garlic (minced)
  • 2 eggs
  • 1/2 pound large shrimp (peeled and deveined)
  • 14 ounces medium dried rice noodles
  • 2 teaspoons paprika
  • 3 green onions (cut into 1-inch pieces)
  • ¼ cup roasted peanuts, chopped ((divided))
  • 1 cup bean sprouts

    In a small bowl, combine the sauce ingredients and mix until the sugar has dissolved. Reserve.
